Our kitchen counter tops are getting put in today and I am SO excited! It's been a long road but the house renovation is starting to wind down and I'm just so ready to get back a sense of normalcy! (I haven't had a full on kitchen in months).

I liked this chipotle sauce so much that I started making huge jars and using it on everything. It really does go with EVERYTHING.

Avocado Quinoa Salad with Chipotle Dressing
Ingredients
- 6 tablespoons red wine vinegar (I prefer red wine vinegar but any vinegar will work)
- 6 tablespoons olive oil
- 1/4 cup maple syrup (or agave nectar/honey)
- 1 chipotle pepper in adobo sauce
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Amounts as desired of the following:
- Butter lettuce
- Chopped kale
- Roasted quinoa (cook quinoa as directed, then spread it evenly on a baking sheet and place in oven under the broiler on high for 5-7 minutes, turning halfway through)
- Purple onion, sliced
- Cherry tomatoes, halved
- Mashed avocado
- Roasted corn
- Cilantro
- Lime juice
Instructions
- Add all ingredients to a food processor. Pulse until smooth. Use immediately or store in a sealable jar for up to five days in the fridge.
- Combine all ingredients in a bowl. Enjoy!
