Citrus & Cream DIY Popsicles

SUMMER IS UPON US, BABY!

This weekend it's suppose to be clear skies and 79 degrees (here in SoCal) and I am planning out every single time slot that I can make it to the beach to get some sunshine. Because hi, still super pale over here.

Anyway! The warm weather has me excited for summer and for making fun treats like these citrus and cream popsicles!

These are SO easy to whip it up. It will take you maybe 5-10 minutes to make them. The hard part is waiting for them to freeze ;)

The ingredient list is beyond simple. And we all know that simpler = healthier. These are WAY better for you than even the healthiest store bought option, and you get the reassurance of knowing exactly what is in your dessert! Which honestly, can be almost impossible with store bought ice cream.

Speaking of healthy - here are the BPA-Free popsicle molds I used.

I think I will give these a try with lemon and lime as well!

Citrus & Cream DIY Popsicles
Ingredients
  • 3-4 kiwis, peeled and cut into chunks
  • 4 oranges, peeled and cut into chunks
  • 1 - 14 ounce can coconut cream, refrigerated for at least 2 hours
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
Instructions
1. Puree the kiwis and oranges in a food processor. You can puree them together or separately. I did mine separate. Set aside.2. In a small bowl whisk together coconut cream, maple syrup, and vanilla extract until smooth. 3. For layered popsicles: spoon a bit of pureed fruit into the bottom of your popsicle mold. Then spoon in some of the coconut cream mixture. Continue to layer until the mold is full. Repeat with each popsicle mold. 4. Place in the freezer for at least 4 hours. After 30 minutes you can insert a popsicle stick and then continue freezing.
