Crispy, creamy, crunchy, savory... it's out of this world. 

Growing up, green bean casserole was a staple for our family's holiday dinners. I was obsessed with it even then, as a kid. And Thanksgiving would just not be Thanksgiving without this dish!

Just in case green bean casserole is a new thing for you, I'll give ya a quick run down of what it’s all about. 

The main ingredient is green beans (obviously). I love buying fresh green beans over canned! After boiling the green beans, we bathe them in a creamy mushroom sauce that tastes a little peppery and a little soy sauce-y. We then top the creamy green beans with fried onions, which are a gift to taste buds everywhere BTW. And then we bake the entire thing to make the inside even more creamy and the outside perfectly crispy.

The best part is this casserole is totally from scratch minus the fried onion pieces that I bought from Trader Joe's, but they are healthier than most options and they are vegan. And for being from scratch, this recipe isn't too time consuming and doesn't require much brain power. Thank goodness, right? LOL.

ingredients:

  • 2 pounds fresh green beans 
  • 1 tablespoon olive oil 
  • 2 cloves garlic, minced 
  • 1 - 8 ounce package white mushrooms, chopped 
  • 1 tablespoon soy sauce 
  • 5 tablespoons vegan butter (such as Earth Balance) 
  • 3 tablespoons flour 
  • 3/4 cup vegetable broth 
  • 3/4 cup unsweetened almond milk
  • 8 ounce package fried onion pieces

instructions:

How to cook Healthy Green Bean Casserole from Scratch

  1. Preheat oven to 350 degrees F. Grease a large baking dish and set aside. 
  2. Add water to a large pot and bring to a boil. Once boiling, add green beans. Bring the water and beans back to a boil. Then reduce the heat to medium and cook for 15-20 minutes, depending on how tender you want the green beans to be.
  3. Drain the green beans and set aside. 
  4. In a large skillet, add oil, garlic, and mushrooms. Cook for 10 minutes over medium heat. Then add soy sauce and salt & pepper to taste. Stir and simmer for an additional 5 minutes. 
  5. Meanwhile, in a large saucepan, melt the butter over medium heat. Add flour and whisk until fragrant, about 1 minute. Slowly whisk in vegetable broth and almond milk. Continue to whisk the mixture until it slightly thickens, about 3 minutes. Add salt & pepper to taste. 
  6. Add the sauce to the skillet with the mushrooms. Stir to combine. Add the green beans to the skillet. Stir until the green beans are coated with the creamy mushroom sauce. 
  7. Pour half of the green bean mixture into the baking dish. Lightly season with salt and pepper. Add a layer of fried onions on top of the green beans. A couple handfuls should do the trick. You want the layer covered evenly. 
  8. Add the rest of the green beans, again lightly season with salt and pepper and add a final layer of fried onions to the top. 
  9. Bake uncovered for 25-30 minutes or until the onions are crispy and golden. Serve warm.
