Healthy Loaded Sweet Potatoes with Garlic Aioli Sauce

Despite having a food blog, I'm actually fairly lazy in the kitchen. 

Like I enjoy to cook. A lot. It makes me really happy. But if the recipe has 20 ingredients and requires more than an hour of my time, definitely do not sign me up. Ain't nobody got time (or patience) for that. 

I like to keep things simple. And that's why these loaded sweet potatoes and I get along so well.

If you can manage to bake a potato in the oven, which I really hope you can(!), then you can make these healthy loaded potatoes! Because after you bake them, all you have to do is load them up with the goods. Which can be anything you want, really. 

I like to make these for a super simple meal after a long day. They are surprisingly tasty with a bit of salsa on top, too! You can get creative here guys!

Sweet potatoes are really good for you, so eat up! Also, I definitely don't count calories, but in case you do - sweet potatoes are roughly only about 130 calories each, skin included. Boom.

Healthy Loaded Sweet Potatoes with Garlic Aioli Sauce
Ingredients
  • 3-4 large sweet potatoes (organic optional)
  • 1 - 15 ounce can black beans, drained and rinsed
  • 1 large tomato, diced
  • 1-2 avocados, sliced or mashed
  • for garnishing, cilantro
  • for garnishing micro greens
  • 3 tablespoons vegan mayo
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 garlic cloves, pressed until very fine
  • 1/4 teaspoon sea salt
Instructions
1. Preheat oven to 400 degrees F. Wash potatoes. Poke each potato a few times with a fork to help them cook faster. Lay the potatoes flat on a pan and bake for 40-50 minutes until tender. 2. While the potatoes are cooking, prepare your aioli sauce. Combine: vegan mayo, olive oil, fresh lemon juice, garlic, and salt in a small bowl. Mix until creamy. 3. Cut a slice into the potato and squeeze the ends to open the potato up. Fill the potato with the beans, tomato, and avocado. Sprinkle cilantro and micro greens on top. Drizzle with garlic aioli. Enjoy!
