There is nothing better than a good poke bowl!

Poke bowls make great lunches and dinners and are so simple to throw together.

In my poke bowls, I like my rice to be slightly warm and sticky, and topped with all kinds of fresh yummies :)

The best poke topping ever is MANGO!!

Sorry for yelling, it’s just mango and warm rice are the perfect pair. (But you already knew that).

I also added avocado, cucumber, carrot, fresh greens, cilantro, green onion, and cilantro.

But the biggest game changer in this recipe is the SPICY SHOYU SAUCE.

A good sauce always elevates a recipe and that is definitely true here.

Made with rice vinegar, soy sauce, and coconut sugar, and chili paste (to name a few ingredients) - this spicy shoyu sauce is the perfect addiction. Not to mention SUPR EASY to whip up!

ingredients:

Poke Bowl
  • 1 cup cooked white rice 
  • cucumber 
  • mango 
  • carrot 
  • avocado 
  • greens 
  • cilantro 
  • green onion 
  • sesame seeds
Spicy Shoyu Sauce
  • 1 tablespoon rice vinegar 
  • 1 tablespoon soy sauce 
  • 1 tablespoon water 
  • 1 tablespoon coconut sugar or brown sugar 
  • 2 cloves garlic, minced 
  • 1/4 teaspoon chili paste 
  • 1/4 teaspoon sesame oil

instructions:

How to cook Vegan Poke Bowl with Spicy Shoyu Sauce

  1. Cook rice according to directions. Then build your poke bowl with the listed ingredients or other toppings you like. 
  2. In a small bowl, combine all spicy shoyu sauce ingredients. Mix well.
  3. Slowly pour the spicy shoyu sauce over your poke bowl. Please note that you may not want to use all of the sauce and any extras can be stored in the fridge.
