Well friends, we made it through another week! And this weekend should be extra fun with the super bowl and all ;)

Honestly, I'm not a big NFL fan, so my excitement level for "the big game" itself is pretty low. HOWEVER, however...  that doesn't mean I don't like to celebrate. After all the super bowl means good food, drinks, and friends. And that is right up my alley.

I've been doing so well with my workout routine you guys. Like I am patting myself on the back right now LOL. But for real! I haven't missed a workout, I've been pushing myself hard every single time, andddd I've even been doing a proper full body stretch session after each workout. 

I'm proud of myself and it feels good to be back in the zone. 

Sooo - with that being said, I'm going to enjoy myself this weekend but there is no way I'm going to sacrifice all my hard work and fill my body with junk. 

(I'm not saying people shouldn't treat themselves now and then. But that's not my personality. Once I start eating the naughty foods, I legit can't stop. haha)

That's where this veggie pasta salad gets to shine, btw.

Simple & Healthy Veggie Pasta Salad
Ingredients
  • 1 - 16 ounce package whole wheat fusilli pasta
  • 2 cups tomatoes, diced
  • 1/2 purple onion, chopped
  • 2 cucumbers, diced
  • 1 - 3.8 ounce can sliced black olives, drained
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 cup extra virgin olive oil
  • 1/2 cup apple cider vinegar (or red wine vinegar)
  • 1 tablespoon dreid oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon red chili flakes
  • to taste, cracked pepper
Instructions
1. Cook pasta according to direction. Drain and rinse immediately with cold water. 2. While the pasta is cooking, in a jar combine: olive oil, vinegar, oregano, salt, garlic powder, & chili flakes. Whisk until the ingredients are well blended and set aside. 3. In a large bowl combine rinsed pasta, tomatoes, purple onion, cucumber, olives, and cilantro. Pour in dressing mixture. Toss until well combined. 4. The pasta salad can be served immediately but the flavor is best after marinating in the fridge for at least 1 hour.*Will last in a sealed container in the fridge for up to one week.
