Simple Squash and Chickpea Rotini Pasta
A super simple veggie pasta - you can never go wrong with it!

INGREDIENTS:
half package rotini pasta (I used Trader Joe’s quinoa rotini pasta)
1 can chickpeas, drained and rinsed
1-2 yellow squash, diced
1/4 cup + 2 1/2 tablespoons olive oil - divided
2 tablespoons nutritional yeast
1/2 teaspoon onion seasoning
1/2 teaspoon dried basil
salt and pepper, to taste
fresh basil, for garnishing
DIRECTIONS:
Cook pasta according to directions.
While the pasta cooks, heat 1/2 tablespoon of olive oil in a skillet over medium heat. Add squash and chickpeas to skillet and sauté for 6-8 minutes. Season lightly with salt and pepper.
Once the pasta is done cooking, drain it and return it to the pot. Toss the pasta with the remaining 1/4 cup + 2 tablespoons olive oil and nutritional yeast. Stir in squash and chickpeas.
Add seasonings and fresh basil. Toss well until the pasta is evenly coated with the seasonings. Serve immediately.
