There was a lot of "taste testing" going on during the making of this recipe...

As in, I almost didn't have enough jam leftover to take a nice photo of it. HAHAHA.

But I think that should be a good indicator to you that this recipe is delicious. It's actually kind of mind-blowing that it's so tasty, because the jam itself is only made up of four ingredients.

I think these Apple Jam and Pomegranate Crostini's make perfect appetizers for the holidays. They would certainly make a yummy breakfast.

Also, you can make the jam all by itself and just jar it up in your fridge for whatever you want to use it on. Same thing with the leftover jam from the crostini's.

Moral of the story, these little crostini bites are awesome. They are crunchy, warm, and the pomegranate seeds burst in your mouth for random pops of sweet juiciness and flavor.

Apple Jam and Pomegranate Crostini
Ingredients
  • 3 green apples, diced
  • 1 pomegranate, seeds of
  • 1 teaspoon coconut oil
  • 1/2 teaspoon cinnamon
  • 2 tablespoons maple syrup
  • 1 - 12 inch baguette, cut into 1/2 inch thick slices and toasted
  • for garnishing, fresh mint leaves
Instructions
1. Add coconut oil to a medium-sized saucepan. Turn heat to medium. Once the oil has melted, add in the apples, cinnamon, and maple syrup. Cook, stirring often, for 10 minutes. 2. Spread each side of toast with a spoonful of the apple jam. Sprinkle with pomegranate seeds. Add a mint leave for garnishing (if desired).
