Tofu Egg Salad Sandwich
This Vegan Tofu Egg Salad Sandwich is a delicious alternative to traditional egg salad. Topped with arugula, sprouts, tomato, and cucumber - itβs a winner!
You know how you just get random a** cravings sometimes?
Well I just NEEDED an egg salad sandwich today.
So I reached wayyyy back into my recipe files and pulled out this egg salad sandwich (made with tofu, not eggs).
I forgot how good it was!

I topped the sandwich with arugula, sprouts, tomato, and cucumber. Delish!

Tofu Egg Salad Sandwich
ingredients:
- 8 ounces of firm tofu (or about half of a standard package of tofu), pressed to remove liquid.
- 1 clove garlic, minced
- 2 celery stalks, chopped
- 1 - 1/2 tablespoons purple onion, chopped
- 1 dill pickle spear, minced
- 1 tablespoon pickle juice from the jar
- 1 tablespoon mustard (I used regular mustard, dijon works as well)
- 1/3 cup vegan mayonnaise
- salt and pepper, to taste
instructions:
How to cook Tofu Egg Salad Sandwich
- Add tofu to a medium-large bowl. Break it apart using a fork. Add the remaining ingredients and mix well. And salt and pepper to taste. Serve immediately by itself, with crackers, or on a sandwich with veggies. Enjoy!
